Banff, A.B. May 2, 2018 – A panel of 24 culinary experts combined with the events popular vote crowned Executive Chef jW Foster and his culinary team representing Fairmont Banff Springs Vermillion Room the winner of the inaugural Canadian Cochon555 Banff event. This nose-to-tail culinary competition features 5 chefs, 5 heritage pigs, 5 wine makers, and is dedicated to supporting family farmers and educating buyers about the agricultural importance of eating heritage breed pigs.
Participating chefs fashioned 5 dishes and were judged on their creative “nose to tail” approach with attention focused on superior flavor, texture, appearance, and nutritious qualities. Executive Chef jW Foster and team worked closely with local producer Country Accent Heritage Breeds to prepare a mangalista duroc cross.
“Sourcing local is already a common practice at Fairmont Banff Springs and we work closely with Alberta farmers to bring a fresh taste of place to the 12 unique food and beverage venues within the hotel,” said General Manager David Roberts. “Using the whole animal and creating new dishes with sustainable practices is already top of mind here and we love supporting our local producers.”

Fairmont Banff Springs Vermillion Room culinary team will compete in the Grand Cochon Chicago this September 2018, the epic finale to the multi- city touring culinary competition.
The Vermillion Room will open May 15th as Banff’s only brasserie and newest legacy restaurant in a series of innovative and highly successful culinary venues from the team at Fairmont Banff Springs. The open and interactive kitchen will be serving locally sourced products that marry French traditional cuisine with an authentic Canadian interpretation. The Design of the Room by Calgary’s FRANK Architecture brings a welcome vibrancy, and recreates the historical richness of a Parisian Brasserie in a contemporary mountain setting.
