The team shares a commitment to the preservation of the historical and architectural elements of the landmark property, once the tallest building in the British Empire. The grand renovation will be completed summer 2019, in time for the hotel’s official anniversary celebration.

At the heart of the hotel’s metamorphosis will be an elevated food and beverage experience, as Fairmont Royal York prepares to debut four new signature dining concepts. Responsible for redefining the iconic hotel’s cuisine is renowned Fairmont executive chef, jW Foster. Chef jW brings to the hotel a wealth of knowledge and expertise from more than 15 years’ as a seasoned chef at Fairmont properties around the globe. He plans to honour the brand’s commitment to sustainable food by implementing a new program that works closely with Ontario farmers to provide authentically local ingredients in each new menu.
