In honor of World Food Day (WFD) on October 16th, Accor, the leading augmented hospitality group, will highlight its commitment to reduce food waste with the launch of a Zero Waste Recipe Collection–an e-cookbook featuring recipes created by talented Fairmont, Sofitel and Novotel chefs from properties across Canada and the U.S. Select recipes will be shared on Accor’s social media channels beginning on October 16th, and the complete collection will be revealed on October 31st at planet21-recipecollection.com. In addition, hotels will recognize and celebrate World Food Day with on-property events and special menus for both guests and employees.
The curated recipe collection, an approachable way to raise awareness of the global food waste issue, features 25 recipes from the region’s most notable chefs that will be implemented across various properties and will inspire others to utilize ingredients that would otherwise be discarded. Home cooks will find the zero-waste recipes easier to prepare and more delicious than they might think. This is the first recipe collection of its kind that Accor is launching to the public, and will be available solely online to further reduce printed waste. Accor’s World Food Day actions are a part of its Planet 21 sustainable development program which underscores the group’s commitment to positive hospitality through impactful projects and initiatives, including its successful Health and Sustainable Food Charter which aims to nurture an appetite for healthy, sustainable and waste-free food programs. The Charter outlines nine commitments that address current food, health and environmental issues and promise real action by year-end 2020—from reducing food waste by an average of 30% percent to favoring local food suppliers and seasonal produce. - Fairmont Orchid – Fairmont Orchid, located on Hawaii’s main island, will host a complimentary Botanical Garden & Bee Tours for guests lead by the hotel’s Director of Hawaiian Culture, Ka’iulani Blankenfeld. Guests will experience an in-depth exploration of tropical plant species, beehives filled with 80,000 honeybees, and the on-property chef’s garden which supplies fruits and herbs for the hotel. Fairmont Orchid will also feature a special zero-waste dessert at Brown’s Beach House, the resort’s signature fine dining restaurant: Kiawe Honey Panna Cotta is made with Kiawe Honey, the world’s rarest variety of honey, sourced from their very own beehives.
- Fairmont Banff Springs – Fairmont Banff Springs will host a Banff Community Dinner in celebration of World Food Day on October 24th. The community event is open to the public and will benefit Banff Food Rescue. Donations are welcome but no one will be turned away, ensuring that the event also benefits members of the community who are in need of a healthy meal. The menu will feature “ugly” vegetables that do not meet grocery standards and would otherwise go to waste, purchased directly from growers.
