Hyde Perth Kitchen + Cocktails is Perth’s chicest restaurant and bar, boasting an outdoor pool, sun loungers and DJ decks. The opening of Hyde Perth Kitchen + Cocktails is a WA first for the HYDE brand, which is widely known for its iconic celebrity-packed venues in Los Angeles and Miami.
Designer Carlie Milosevic has evoked her signature style with an urban chic vibe, while playing homage to Perth’s natural beauty, pastel sunsets and picturesque beaches. This neutral colour scheme with pops of colour creates a timeless and relaxed alfresco space.
A calcutta viola marble island bar frames the view out towards the pool, while bi-fold doors open up to the leafy pool deck creating a seamless indoor-outdoor space, quite unique and enviable in the Perth CBD. Versatile seating options and a private dining room are now synonymous with Hyde’s party vibes and fast becoming standout features for event bookers.
Hyde Perth Kitchen + Cocktails’ Mediterranean inspired menu is kicking off with poolside snacks from house made dips, Kingfish and mouth-watering Saganaki, to braised brisket pita pockets and a selection of wood fired pizzas. For the perfect snack that never ends, check out the bottomless fries menu with five varieties of European flavoured fries to sample.
An array of fresh, summer inspired salads sprinkle the menu from cucumber, quinoa topped with natural yoghurt to the saffron noodles with guindillas, almonds, herbs and saffron tahini yoghurt. Meats and garden-fresh vegetables leap to the fore on the mains, where dishes like chicken marbella, green olives, prunes and caper berries or porterhouse, blackened rakidry-aged and lemon are perfect for those looking for something a little more substantial.

Cocktail lovers of Perth rejoice as Hyde Perth Kitchen + Cocktails showcases an extensive list of innovative and equally moorish cocktails designed by Australia’s most awarded bartender Tim Philips from Sweet & Chili.
“Every cocktail should come with a story that brings all you senses together and this is what you will find at Hyde,” said Philips.
From the Poppop (Don Julio Blanco, buttered popcorn, grapefruit) to the salted honeycomb espresso martini and poolside negroni, all your cocktail dreams have been answered. HYDE is known globally for large format drinks designed to share and Hyde Perth Kitchen + Cocktails is no exception, with a 10 litre Tropicana Punch that can be shared anytime day and night.
At the bar, guests can acquaint themselves with easy drinking white styles and varietals like Prosecco and Veuve Cliquot from France, or ease into Sunday Sessions over a casual bottle of Aix Rosé from Provence in the South of France! On the red wine menu, light and juicy styles dominate, with Syrah, Shiraz and Pinot Noir all calling out to be paired with the beef ribs or enjoyed with the lamb T bone, crispy potatoes and toum.
Bottomless Brunch, the socially acceptable excuse for day drinking, best enjoyed with friends, is available across the weekend from 12pm – 2pm, offering guests the very best selection of signature dishes and cocktails from $85 a head. ABOUT EXECUTIVE CHEF – DANNY SANCHEZ
Born in Peru, Danny started his culinary career later in life, while in America, as part of the Four Seasons Hotels and Resort apprenticeship program, he decided to leave the front of house and accounting and move to the kitchen. Training in kitchen in Miami Beach, Jackson hole and New York to then come back home to Lima, Peru where he worked at Astrid y Gaston. In 2009 Danny moved to Melbourne where he landed jobs at Mamasita, Movida, Dandelion and Rockpool Bar and Grill. During his time in Melbourne he travelled to San Sebastian to work at Mugaritz one of the finest restaurants in the basque country. After coming back from Sapin he was invited to join the opening team at Rockpool Bar and Grill Perth, an experience that made him value what WA has to offer. Coming back to fine dining, in 2012 Danny took over the kitchen at Jackson’s restaurant where Neal Jackson nurtured him in the rediscovery of classic techniques and above the complete commitment to flavour and substance. At the being of 2016, Danny joined The Flour Factory where he started working with the small suppliers and embracing the simple flavours that the seasons in WA offer. In 2017 while doing Flour Factory he took over award -winning whiskey bar Varnish on King and opened his first bar with the group, Caballitos tequila bar. In 2018 Danny embarked in a life changing journey and travel through Morocco in order to discover its food and its traditions. The end result was an instant success in the shape of Hadiqua Bar, a Moroccan inspired bar at the new Hibernian Place.
