HOW TO CELEBRATE A ZERO WASTE CHRISTMAS WITH FAIRMONT HOTELS & RESORTS
Fairmont Hotels & Resorts shares insights into how guests can celebrate a greener festive season, with a series of recipe ideas and sustainability tips from its culinary experts around the world
The collection of delicious recipes encourages guests and locals to make the most of their Christmas leftovers, helping them to experience a greener Christmas this year. From leftover turkey ragout and turkey and brussel sprout spring rolls to Eton mess and strawberry rhubarb cobbler, these recipes will delight both the taste buds and the conscience of dinner guests from around the world.
Fairmont’s second Luxury Insights Report, which focused on Gateway to Home – Hotels as the Heart of their Communities, found that four out of five respondents consider environmentally sustainable practices and locally sourced kitchen ingredients to be important. The report also found that luxury travellers are increasingly motivated to visit hotels that implement good environmental practices, in fact 78% of luxury travellers consider it important that their hotel has environmentally-sustainable practices.
Fairmont is part of the leading hospitality group Accor, which has made food waste reduction a key priority of its Planet 21 sustainability charter, through a number of initiatives including measuring kitchen waste, reducing buffet food quantities and educating staff, partners and guests. The new Zero Waste Christmas recipe collection aims to share the expertise of Fairmont chefs with guests, to inspire them to reduce food waste at home.
Fairmont Hotels & Resorts currently employs a number of sustainable initiatives, including at Fairmont St Andrews where they have implemented a scheme to eradicate plastic bottles in partnership with Scottish Water and at The Savoy, which was the first London hotel to initiate a food waste recycling programme.
