“It is the greatest honour to have been awarded a Michelin star again today,” stated Anthony Demetre, Executive Head Chef and Proprietor of Wild Honey St James. “This star is testament to the entire team’s dedication to delivering excellence to every guest dining at Wild Honey.
“I am fortunate enough to have been in this position before in my career and the feeling on getting the star is unparalleled in the culinary world. What makes me so happy is the fact that this is a first for many of the young team at Wild Honey and I couldn’t be prouder. The dedication, passion, loyalty and sheer hard work put in over what has been a truly testing year has been immeasurable,” adds Anthony Demetre.
Since opening its doors in spring 2019, the restaurant was recognized for its inspired and distinctive interpretations of modern European cuisine using the finest, freshest seasonal produce Britain has to offer, under the guidance of Anthony.
The restaurant's signature dishes include Crisp chicken with hand-cut macaroni and winter black truffles; Fallow venison, slow cooked celeriac with walnut and cocoa, kumquat marmalade, grand veneur sauce; and Wild honey ice cream.
Also commenting on the news, General Manager of Sofitel London St James Marie-Paule Nowlis, said: “We are thrilled for Anthony Demetre, Stephanie Mattil (Wild Honey General Manager), Gergely Csaba (Wild Honey Head Chef) and the whole team that their hard work has been awarded a Michelin star. Today will be remembered as a momentous day in our culinary history of this great hotel and restaurant”.
Wild Honey St James is open for lunch Tuesday to Saturday 12:00 – 14:30 and dinner Wednesday Saturday 17:00 – 21:00. It is closed on Monday and Sundays.

About Sofitel London St James
Originally opened in 2002, Sofitel London St James sits at the heart of London’s tailoring district, just footsteps from Buckingham Palace, Leicester Square and St James’ Park. Building upon the legacy of the building’s rich heritage as a banking institution, the Accor hotel underwent a £16.5m refurbishment project in 2019 under the creative direction of Pierre-Yves Rochon, renovating the 183 guest rooms with modern, bold interior design and reaffirming Sofitel London St James’s as the home of luxury French elegance in London. In line with the renovation, Chef Anthony Demetre’s successful Mayfair restaurant reopened at the hotel, bringing Wild Honey St James to life alongside the St James Bar.
