Fairmont Hotels & Resorts has revealed a refreshing new spin on its global line-up of masterfully balanced and delicious cocktails known as Classics Perfected 2.0: ‘The Decades’. Created as an exciting new spin-off to the first Classics Perfected menu released in 2015, the revitalized menu pays homage to some of the most fascinating cocktails in history, and was designed by an elite team of award-winning mixologists known as the Fairmont Tastemakers. In April 2019, the Tastemakers gathered at New York City’s The Dead Rabbit to ideate, collaborate and create the new cocktail collection, available to guests at Fairmont bars and lounges worldwide. Today, the highly anticipated new menu made its official debut at The Plaza, A Fairmont Managed Hotel in New York City.
“Cocktail culture has always been about more than just imbibing,” said Sharon Cohen, Vice President, Fairmont Hotels & Resorts. “Throughout the decades, Fairmont bars around the world have historically been amongst the coolest watering holes; special places where the most in-the-know locals gathered to socialize, where landmark deals were celebrated with a toast and where history was made. The charismatic bartenders who have presided over these bars have been shaping cocktail trends, regaling guests with stories and providing over-the-counter wisdom, for more than a century. It is not only the extraordinary craftsmanship of our top mixologists, but the meaningful connections they share with our guests which makes Classics Perfected a joy to discover.”
The new collection celebrates ten of the most iconic cocktails crafted throughout the decades of the 19th and 20th centuries. Modern takes on the French 75, the Mai Tai and the Old Fashioned are just a small sample of what guests can expect, all created with luxury and premium spirits and mixed with exquisite, house-made syrups, juices and bitters. Global spirit partners included in the program, chosen for their quality and craftsmanship, include: Remy Martin XO, Veuve Clicquot, Cointreau, Mount Gay, Botanist, Gentleman Jack, Bombay Sapphire, Grey Goose Vodka, Woodford Reserve, Casamigos Tequila & Mezcal and The Glenlivet 12 Year Old.
“Classics Perfected 2.0 goes beyond a traditional cocktail menu offering as it celebrates the heritage of Fairmont cocktail culture over two centuries. The collection captivates guests, not only with delicious flavors, but with fascinating stories and history, celebrating the influences of foreign cultures, the glamour of travel and the innovation of bartenders throughout the ages,” said Ralitza Iordanova, Director, Global Lifestyle Partnerships, Accor. “We are honored to partner with the highest caliber of global premium spirit brands, which together with our passionate Tastemakers, have created this unforgettable new spin on the classics.”
Fairmont’s team of six elite Tastemakers were chosen from the top bars at Fairmont’s luxury properties worldwide in recognition of their individual talent and mastery of cocktail methodology. The Fairmont Tastemakers include: Bannie Kang, Fairmont Singapore; Grant Sceney, Fairmont Pacific Rim; Nader Chabaane; Fairmont The Queen Elizabeth; Jo Last, The Savoy, A Fairmont Managed Hotel; Andrew Grenz, Fairmont Austin and Tai Barbin, Fairmont Rio De Janeiro Copacabana.
