Raffles London at The OWO, Hinduja Group and Onex Holding have announced an exclusive partnership with Mauro Colagreco, the acclaimed chef behind Mirazur, which was inaugurated into the “Best of the Best” category in The World’s 50 Best Restaurants awards 2021. In the first chef partnership announced at this landmark destination, Chef Colagreco will collaborate with Raffles Hotels & Resorts to create two unique restaurants and an avant-garde Chef’s Table at the hotel, which is set to open from late 2022 in Whitehall, one of London’s most historically important addresses.
The OWO will shift the culinary compass of the capital’s dining scene with 11 destination restaurants and bars. Mauro Colagreco will curate multi-sensory dining experiences set within the building’s most storied rooms. These include a brasserie with a twist, a fine dining restaurant, and a private Chef’s Table. In choosing Raffles London as his home in the capital, Colagreco explains: “The incredible location, combined with the professionalism of the Raffles London team, convinced me that this was the ideal time and place to launch for the first time in London with concepts that will be tailor-made for Raffles.”
Colagreco’s cuisine defies categorisation, and his talent lies in his sensitive balance of flavour, allowing each magnificent ingredient to shine. In a quest to encourage diners to appreciate the raw purity of his dishes, Colagreco keeps things simple, expressing his skill through the marriage and combination of superb ingredients.
At Raffles London, diners will be invited to embark on a culinary journey through the seasons, showcasing peerless produce sourced at its seasonal peak. Driven by a consistent commitment to seasonality, local procurement, and sustainability, Colagreco’s signature restaurants will showcase the UK’s best organic produce sourced daily from farms, fields and shores across the country. Chef Mauro’s dishes will also be available for in-room dining, curated events and for residents of The OWO Residences by Raffles.
